I
consider this a "finishing sauce" for use in the last fifteen
minutes of cooking, or just to serve as a dipping sauce. This is because
the sugar in it will burn.
Combine
in blender:
1
1/2 C tomato catsup
1 Handful fresh basil
1 whole pod of garlic (peeled)
4 fresh red cayenne peppers
1 C cider vinegar
1/4 C soy sauce
1/4 C Worcestershire sauce
2 T dry mustard
4 T chili powder, or to
taste
1 - 2 T grated fresh ginger
2 T olive oil
1 C packed light or dark
brown sugar (I have enjoyed first run from the mill raw sugar) other
options are pure cane syrup, or honey.
Pour
into saucepan. Add four lemon slices, and simmer stirring often for
20 to 30 minutes.
