Uses for Leftover Smoked Meat
The number one rule when making use of leftover smoked meat is to prepare to have smoked meat left over!
Smoked Meat Salad
Here’s one you can do with any kind of smoked meat, and in any combination.
Dice into small pieces whatever you have, excluding fat when possible. In a mixing bowl add:
- The meat
- Celery (Diced small)
- Bell pepper (Diced small) Red or yellow adds a colorful presentation
- Mayonnaise
- A small amount of Creole mustard (Yellow mustard will do)
- Salt (To taste)
- A hint of herbs if you like
- Thyme
- Ground fennel
- Cayenne pepper
- Basil
- Oregano
Mix with a spoon into a spread.
Adjust mayonnaise as necessary to have appropriate looking dish.
Smoked Chicken Noodle Soup
Bring to a simmer in a saucepan, one to two quarts seasoned chicken stock (See recipe).
Have ready:
- A cup of two of smoked, de-boned chicken, cut into small pieces
- Chopped green onions
- Chopped parsley
- Sliced mushrooms (optional)
- Add a cup or two of pasta (I like bite size pasta for soup such as bowties, shells, rotini, etc. (They stay in your spoon better))
- When pasta is almost done add the other ingredients.
There it is quick and easy.
